传说，当年的明太祖朱元璋用“福”字作暗记，准备杀掉一个人。好心的马皇后为了消除这场灾祸，下令全城的人必须在天亮之前在自己的家门上贴上一个“福”字。其中有一户人家不识字，把“福”字贴反了。第二天，皇帝派人上街查看，发现家家门上都贴上了“福”字，还有一家把“福”字贴倒了。皇帝听了大怒，立即命令御林军把那家满门抄斩。马皇后一看事情不妙，忙对朱元璋说：“那家人知道您今日要来造访，故意把‘福’字贴倒了，这不是‘福’到了吗?”皇帝一听言之有理，便下令放人，一场大祸终于消除了，从此人们把“福”字倒贴起来，一求吉利，二是为了纪念善良机智的马皇后。

过春节总少不了一种传统美食——腊肉。在我家乡，每家每户腊月初旬就开始忙着制作腊肉。因为腊肉是春节饭桌上必不可少的美味佳肴。

腊肉全体呈金黄色，瘦肥相间，只是看看就让人口水直流，胃口大开。

腊肉的制作材料很单一，就是猪肉。虽然制作材料简单，但制作过程不简单哦！首先把买来的的猪肉放上盐巴，放在通风处晾几天，然后烧柴生火，切记火不要大了，再在火上撒一层厚厚的木屑。等有烟冒出时就可以熏肉了。

熏肉时，要用专门的架子把肉架住，并且盖上盖子，以防因为烟火散开，导致猪肉熏烤不均匀。虽然不用专人一直看着火，但每隔一段时间就必须去看看。这不但是因为怕肉被烤糊，也是为了把握火候。——火太大或太小都烤不出原汁原味的腊肉。两三天过后，金黄喷香的腊肉新鲜出炉了。这时候，人们通常用绳子把腊肉从小到大串好，再整齐地晾在房梁或竹竿上，以备春节时享用。

腊肉的烹调也很有讲究。它是烹饪界的“百搭王”，与任何一种食材搭配，不但能成为一道色香味俱全的美味佳肴，还别有一番风味。就拿小炒中的芹菜炒腊肉来说吧。先把腊肉切成薄片，再往锅里放些许油，待烧热后爆炒姜蒜和腊肉，最后放入芹菜一起炒。用不了多久，美味可口的芹菜炒腊肉就做好了，真让人垂涎三尺啊！
