地方菜系是在地方菜的基础上逐步发展形成的。每个菜系都融合了很多不同地方、不同民族的菜肴特色。如北京菜，就是融合满、蒙、回、汉等民族菜肴发展起来的菜系。一个主要的菜系，往往又派生出几个分支，如粤菜就有广州、潮州、东江等地方菜。中国的大菜系究竟有多少?至今仍众说纷纭，莫衷一是。有四大菜系说、八大菜系说，也有十大、十二大菜系说。其中公认的有四大菜系，即川菜、鲁菜、粤菜和苏菜，其他比较著名的还有京菜、沪菜、闽菜、湘菜、浙菜、徽菜等。

“川菜”是四川菜系的简称，以成都风味为正宗，还包括重庆、乐山、江津、合川等地方菜。川菜选料讲究，操作精细，品种繁多，风味独特，鸡、鸭、肉类多，鱼类较少。素以豆瓣酱、糟辣椒、花椒、红油、蒜泥、陈皮、香醋为主要调味品。口味的基本特点是酸、甜、麻、辣、香，油重，味浓，具有浓厚的四川乡土气息。主要调味方法有干烧、干煸、鱼香、酸辣、椒麻、怪味、红油等。传统名菜有樟茶鸭子、香酥鸡、麻婆豆腐、宫保鸡丁、怪味鸡、干烧鱼翅、干煸鳝鱼、鱼香肉丝、回锅肉等。

“鲁”是山东菜系的简称，主要由济南和胶东两地的地方菜发展而成。其特点是选料考究，刀工精细，调味适中，工于火候。烹调技法以爆、炒、烧、炸、熘、焖、扒等见长。调味中多咸、鲜、酸、辣、五香、酱香、葱香、蒜香等味。色泽上讲究明汁亮芡，擅长用糖色调色，故菜肴色彩鲜艳，多呈金黄色或枣红色。传统名菜有九转大肠、汤爆双脆、德州扒鸡、奶汤鱼肚等。

“粤菜”是广东菜系的简称，由广州、潮州、东江等地方菜发展而成。其基本特点是选料精细，原料和调味品种类繁多。动物性原料除鸡鸭鱼虾外，还擅长使用蛇、狸、狗、猴等野生动物。烹调技法上吸取了西方菜肴之特长，擅长煎、炸、炒、焗、炖等。口味以清淡、生脆、爽口著称。传统名菜：烤乳猪、盐焗鸡、脆皮鸡、蚝油牛肉、生炆狗肉、豹烩三蛇等。

“苏菜”是江苏菜系的简称，是由扬州、南京、苏州等地的地方菜发展形成的。其特点是选料严谨，做工精细，配色协调，造型美观逼真。以烹制河鲜、湖蟹、菜蔬见长。烹调方法擅长炖、焖、蒸、烧、炒等，着重用汤，讲究原汁原味。风味特点是清鲜、滑嫩、爽脆，肥而不腻，淡而不薄。传统名菜有蟹粉狮子头、松鼠桂鱼、荷包鲫鱼、拆烩鲢鱼头、脆鳝、凤鸡、煮干丝等。

On the eve of the Spring Festival, families get together and have a big dinner. Dumplings are the most traditional food.

The Spring Festival lasts about 15 days long .People visit relatives and friends with the words “Happy new year”. People enjoy the Spring Festival, during this time they can have a good rest.

Children like the festival very much, because they can have delicious food and wear new clothes .They can also get some money from their elders. This money is given to children for good luck.

Also known as Confucius temple, the temple is a place where people sacrifice to Confucius. Listen to adults, in many cities across the country have built the temple. Zhangzhou, the historical and cultural city also built a temple. Zhangzhou is located in the temple are full of historical imprints of older neighbourhoods by west road, it was built in the song dynasty, about one thousand years ago, is a state-level cultural relics protection units. Zhangzhou zhu xi in this lecture not only has the southern song dynasty, the temple, zheng chenggong Huang Daozhou here of sacrifice to Confucius and Confucius seed is used to living here. Therefore, the temple has been celebrated in zhangzhou.

During the Spring Festival this year, I traveled to zhangzhou to visit the temple, worship Confucius film. Around the statue, you step up, reach the majestic dacheng hall, before the house stood six tall pillars of panlong, carver is exquisite, vivid. Enter the temple, the Confucius statue sits in the middle of, as if is to inculcate his disciples. Cave before putting several, case, stand on both sides of the copper horse, kirin, do manual work is delicate, elegant. The hall is of primitive simplicity and easy.

Out of the dacheng hall, stroll around the temple, the environment elegant, flowers fragrance. On both sides of the wing by many generations of preserved inscriptions, stone carvings, shows the long history of zhangzhou Confucian temple and the prominent position. After visiting the temple, I am proud of China have the master such a notorious teachers, proud of with excellent traditional culture of the Chinese nation, is also more inspired me to inherit and carry forward the Chinese nation excellent traditional culture of determination!

Was a "chip, marble" firecrackers, fireworks filled the air. The annual Spring Festival again come, early in the morning, my mother is busy in the kitchen, I decided to go around the streets.

Under the soft light, all kinds of exquisite candy and assistant cordial smile, makes people pleasing, the customers are holding the bags in the crowded out of the supermarket, a smile on each face, bleeding heart honey.

Every family cleaned the house and yard, with the Spring Festival couplets and New Year pictures, even a single dormitory, everywhere look brand-new.

Ah! On New Years eve finally came, the county everywhere colour pomp, in some places across the hung with colored lights series, some place to put the colorful fireworks, and local groups of wearing beautiful happy children at play.

You see, in the crowded people mountain people sea, a huge dragon winding, roaring stretch run up and down.

When the above the bell sound through the twelve, firecrackers exploded on the streets. "Double bang firecracker" up, "ZuanTianHou" roared into the sky. The stars shone in the night, festival of fireworks colourful, the ground laughter, the joy of the people. Like Fried bean firecrackers ring after, people rushed to the street happy New Year to each other, "I wish you a long life." "I wish you a happy Spring Festival!" These words as peoples laughter, as from time to time off firecrackers to fly out of the streets, floating in a festival in the night sky.........

一阵“噼哩啪啦”的鞭炮声传来，空气中弥漫着烟火的气息。一年一度的春节又来到了，一大早，妈妈就在灶间忙个不停，我决定去街上转转。

啊!每条大街小巷，都有那么多五颜六色的身影在晃动，像河水一样流淌，前不见头，后不见尾。

在柔和的灯光下，各色精美的糖果和售货员亲切的笑容融为一体，使人赏心悦目，顾客们抱着大包小包拥挤着走出超市，个个脸上挂着笑容，心里淌着蜜。

家家户户都清扫了房屋和庭院，都贴上了春联、年画，连单身宿舍里也是如此，到处焕然一新。

啊!除夕之夜终于来临了，全县各处都张灯接彩，有的地方横着竖着挂着五色的灯串，有的地方放着五光十色的烟花，还有的地方一群群穿着漂亮快乐的孩子在尽情地玩耍。

你看，在那人头攒动的人山人海中，一条巨龙蜿蜒着，上下翻飞伸展腾挪。

当悠悠的钟声响过十二下，大街小巷上鞭炮齐鸣。“二踢脚”腾空而起，“钻天猴”呼啸着窜入天空。夜空星光闪耀，节日的礼花五彩缤纷，地上欢声笑语，欢乐的人们三五成群。如炒豆般的鞭炮响过以后，人们涌到街头互相拜年，“祝您长寿!”“祝您春节愉快!”这些话语随着人们的欢声笑语，随着不时响起的鞭炮声飞出了大街小巷，飘荡在节日的夜空中………
